Shimeji Mushroom Omelette

First thing I do in the morning, I do a smoothie. Fresh mango if I can choose. And ginger tea to start my day with a relaxed VIBE. If I have more time, I make myself a shimeji mushroom omelet with pak choy veggies. Just put it all together, stir. And fry it. Energy garenteed! Lunch, I prefer hot soup. I like Wild Flavours. Enoki and shimeji always does the trick for me. Snacking? Have you seen how much exotic fruits I have?! I just pick a different one every day.

I generally don't have much time in the evening. Then I grill something. Eryngii or shii-take mushrooms in soya sauce. Some kind of stew. Eddoes and am choi veggies are my favo combi.

Place the omelette on top of the butter rice. In the same frying pan, melt butter and add in the beef, onions and shimeji.
